Description

The grapes come from different producers in the Itata Valley, and the majority of the plants are very old. The soils are predominately granitic with a clay-loam texture, and the climate is humid Mediterranean.

The vineyards are not drip irrigated in order to interfere with the production of the grapes as little as possible. The grapes were hand picked to ensure they reached the winery in the best condition. Most were destemmed before crushing, although 30% were whole-cluster crushed. The resulting must was chilled and decanted prior to inoculation with selected yeasts for fermentation, which lasted 20 days at 14o–16oC to ensure maximum aromas and varietal character.

With a fresh nose and aromas of white flowers and a touch of citrus, which heightens the freshness.

Flavour

The palate offers tremendous acidity, balance, and very enveloping sweetness combined with pleasing persistence.

Serving temperature

Serve at 12° – 14° C.

Food match

Ideal to combine with red meat, white meat.
