The grapes are processed immediately arriving at the winery. They are macerated for 2 days at 10 ° C. The fermentation temperature is 22 ° C to 24 ° C and takes about 15 days, and is achieved by inoculating the skins, pips and juice with selected yeasts. They are made traced to extract the color and flavors of the grape skins.
Once the alcoholic fermentation is completed, the malolactic fermentation takes place naturally.
