The 2018 vintage is marked by the very high temperatures we had in January, February and March, which resulted in an earlier harvest than normal. It was a year of low productions and yields in Casablanca, but with a great concentration in the resulting wines. In winemaking, the grapes are pressed immediately upon arrival at the winery, then the juice is decanted, to ferment a part in barrels and another in stainless steel vats.
The resulting wine is kept on its erasers until it is mixed and bottled. The viognier component, 15%, is cold macerated before fermentation, then decanted and fermented completely in stainless steel, without touching wood.
85% Chardonnay / 15% Viognier
Great fruit intensity, with citrus and mineral notes, also showing the exotic and tropical touches of the viognier, accompanied with soft vanilla notes.
Fresh and elegant. Very pleasant and suggestive acidity. Powerful and sweet tannins.
